Method

Preparation of Oysters

For Raw Oysters

Rinse the oysters under cold water to remove any sand and debris. Place them on a serving platter with ice.

For Miso Broiled Oysters

Preheat the broiler in your oven. In a small bowl, mix miso paste, butter, and lemon juice until smooth. Open the oysters and place them on a baking sheet.

Dill Mignonette Preparation

Make the Mignonette

In a small bowl, combine red wine vinegar, chopped dill, finely chopped shallot, and freshly ground black pepper. Stir well and let sit for at least 10 minutes to allow flavors to meld.

Cucumber Preparation

Slice the Cucumber

Thinly slice the cucumber and arrange the slices on the platter with the raw oysters.

Cooking Oysters

Broil the Oysters

Spoon the miso mixture over each oyster. Broil in the oven for about 5-7 minutes, or until the edges of the oysters start to curl and the topping is golden.

Serving

Plate and Serve

Serve the raw oysters with the dill mignonette and cucumber slices on the side. For the broiled oysters, serve them hot from the oven with additional lemon wedges if desired.
