Curried Cauliflower Steaks

Prepare the Cauliflower

Preheat your oven to 400°F (200°C). Remove the leaves from the cauliflower and slice it into 1-inch thick steaks. You should get about 2-4 steaks from one head.

Season the Steaks

In a small bowl, mix olive oil, curry powder, salt, and black pepper. Brush this mixture generously on both sides of the cauliflower steaks.

Bake the Steaks

Place the seasoned cauliflower steaks on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown.

Rinse the Rice

Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

Cook the Rice

In a saucepan, combine the rinsed rice, water, saffron threads, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed.

Marbled Potatoes

Preheat the Oven

While the cauliflower is baking, preheat the oven to 400°F (200°C) if not already done.

Prepare the Potatoes

Wash the marbled potatoes and cut them into halves or quarters depending on their size.

Season and Roast

Toss the potatoes with olive oil, salt, and fresh rosemary. Spread them out on a baking sheet and roast for 25-30 minutes until crispy and tender.

Combine Ingredients

In a saucepan over medium heat, combine coconut milk, red curry paste, brown sugar, and lime juice.

Simmer the Sauce

Stir the mixture well and let it simmer for about 10 minutes until slightly thickened. Adjust seasoning if necessary.

Pickled Apple Pearls

Prepare the Apple

Core and slice the apple into small pearls or cubes.

Pickle the Apple

In a small saucepan, combine white vinegar, sugar, and salt. Bring to a boil, then add the apple pieces. Remove from heat and let sit for at least 30 minutes.

Garnish

Prepare the Garnish

Chop the cilantro and mint finely. Drizzle pomegranate molasses over the dish right before serving.
