Method

Marinated Chicken Thigh

Prepare the Marinade

In a large bowl, combine olive oil, minced garlic, cumin, paprika, salt, black pepper, and lemon juice. Mix well.

Marinate the Chicken

Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Skewer the Chicken

After marination, preheat your grill or oven. Thread the marinated chicken thighs onto skewers.

House Hot Sauce

Mix the Hot Sauce

In a small bowl, combine hot sauce, honey, and garlic powder. Stir until well mixed and set aside.

Lime Pickled Radish

Pickle the Radishes

In a bowl, combine thinly sliced radishes, lime juice, salt, and sugar. Mix well and let it sit for at least 15 minutes to pickle.

Sumac Onion

Prepare the Sumac Onion

In a bowl, combine thinly sliced red onion, sumac, olive oil, and salt. Toss until the onion is well coated. Let it sit for at least 10 minutes for the flavors to meld.

Cooking the Chicken Skewers

Cook the Skewers

Grill the chicken skewers on medium-high heat for about 10-15 minutes, turning occasionally, until fully cooked and the internal temperature reaches 165°F (75°C).

Serve

Remove the skewers from the grill. Serve with house hot sauce, lime pickled radish, and sumac onion on the side.
