Assemble and Cook
Prepare bread and butter
Remove butter from fridge about 5–10 minutes before starting if very cold so it spreads easily. Use a small dish and soften unsalted butter with back of spoon for about 30 seconds if needed.
Spread butter and/or mayo
Spread about 1/2 tablespoon of softened butter on one side of each of 4 slices of bread (these will be the outside of the sandwiches). If using mayonnaise instead of butter on the outside, spread about 1 teaspoon mayonnaise on each outside slice instead of butter. For a mix, you can butter the outside and add 1/2 teaspoon mayonnaise to the inside for extra creaminess.
Assemble sandwiches
Place the 4 unbuttered slices on a clean work surface, buttered-side down. On each, place one cheese slice. If using tomato, add one tomato slice on top of the cheese. Sprinkle a tiny pinch of black pepper over tomato or cheese if desired (about 1/8 teaspoon per sandwich). Top each with the remaining buttered slice, buttered-side up, forming 4 sandwiches.
Cook first side
Place 2 sandwiches (or as many as fit comfortably without crowding) in the pan. Cook undisturbed for 3–4 minutes, pressing gently with a spatula after the first 30–45 seconds to ensure even contact. Check underside — it should be golden brown. If browning too quickly, lower heat slightly.
Flip and cook second side
Flip each sandwich and cook the second side 2.5–4 minutes until golden brown and cheese is melted. If the cheese needs extra melting without over-browning, reduce heat to low, cover pan loosely with a lid for 30–60 seconds, then remove lid and continue until crisp.
Finish and rest
Transfer cooked sandwiches to a cutting board and let rest 1 minute to settle (this helps minimize hot cheese runs). Cut each sandwich diagonally or down the middle, depending on child's preference.
