Prep the cutlets
Place each pork cutlet between two sheets of plastic wrap or in a large zip-top bag. Pound with a meat mallet or rolling pin to about 1/8–1/4 inch thickness, working evenly from center outward. Trim any ragged edges so pieces are uniform in size.
Season
On a plate, combine salt, pepper, and paprika. Lightly season both sides of each pounded cutlet with the seasoning mix.
Set up breading station
Place the flour in a shallow dish. In a second dish, whisk together the eggs and milk until smooth. In a third dish, place the breadcrumbs. Pat each seasoned cutlet in flour, shaking off excess; dip into the egg mixture, allowing excess to drip off; then press into breadcrumbs to coat thoroughly. Set breaded cutlets on a wire rack for 10 minutes to help the coating adhere.
Pan-fry
Heat a large skillet over medium-high heat. Add the neutral oil and butter. When oil is shimmering and butter has melted (but before it browns), add 2 cutlets without crowding. Fry 3–4 minutes per side, turning once, until golden brown and internal temperature reaches 145°F (63°C). Transfer to a baking sheet and keep warm in a 200°F (95°C) oven while cooking remaining cutlets. Add more oil/butter if needed for the next batch.
Mushroom Jäger Sauce
Sauté aromatics and mushrooms
In the same skillet used for the schnitzel (wipe out excess burnt crumbs but keep fond), add 1 tablespoon butter and 1 tablespoon olive oil over medium heat. Add the chopped shallot and sauté 2–3 minutes until translucent. Add the sliced mushrooms and cook without stirring too much for 4–6 minutes until they release their liquid and begin to brown. Add the minced garlic and cook 30–45 seconds until fragrant.
Deglaze and thicken
Sprinkle 1 teaspoon flour over the mushrooms and stir to coat for 30 seconds to remove raw flour taste. Pour in the white wine (or 1/2 cup chicken stock) to deglaze the pan, scraping up browned bits. Let the wine reduce by about half (2–3 minutes).
Build the sauce
Add the beef stock, Dijon mustard, Worcestershire sauce, and thyme. Stir and simmer 3–5 minutes until the sauce begins to thicken slightly. Lower heat to medium-low and stir in the heavy cream. Simmer gently 1–2 minutes to integrate. Taste and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper, adjusting to preference.
Finish
If you prefer a smoother sauce, use an immersion blender briefly (optional) or strain half of the mushrooms into the sauce for a thicker, more rustic texture. Return schnitzels to the skillet or arrange on a serving platter and spoon the mushroom sauce over them. Sprinkle with chopped fresh parsley.
