Prepare and combine
Chill a coupe or rocks glass in the freezer or fill it with ice water to chill while you build the cocktail. In a shaker (without ice), add 2 oz gin, 1 oz black cherry juice, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and 1 egg white.
Dry shake
Seal the shaker and shake vigorously without ice for 12–18 seconds. This 'dry shake' emulsifies the egg white and creates a silky, foamy texture. Aim for a thick, velvety foam.
Wet shake
Add ice (about 3/4 full shaker, roughly 1 cup) to the shaker and shake again vigorously for 10–15 seconds to chill and properly dilute the drink. The second shake should be brisk and energetic to further aerate and cool the cocktail while smoothing the texture.
Strain and serve
Double-strain the cocktail into the chilled coupe or rocks glass using a Hawthorne and fine mesh strainer. This removes ice shards and any small solids, leaving a glossy foam on top.
Garnish (optional)
Float 2 dashes of Angostura bitters on the foam and use a toothpick to create a simple pattern if desired. Finish with a single cocktail cherry or a lemon twist on the rim.
Serve
Serve immediately while the foam is fresh and silky.
