In a brew kettle, heat 5 gallons of water to about 160°F (71°C). Add the Pilsner malt and caramel malt, stirring well to ensure all grains are submerged. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Prepare the Mash

After the mash is complete, sparge the grains with hot water (around 170°F or 77°C) to extract the sugars. Collect the liquid wort in the brew kettle.

Sparge the Grains

Bring the wort to a rolling boil. Once boiling, add the Saaz hops and boil for 60 minutes. Add the Hallertau hops in the last 15 minutes of the boil.

Boil the Wort

After the boiling process, cool the wort quickly using a wort chiller or an ice bath until the temperature reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort into the fermentation vessel and pitch the yeast. Seal the vessel with an airlock and place it in a cool, dark area (around 50°F to 55°F or 10°C to 13°C) for fermentation.

Fermentation

After fermentation is complete (usually 1-2 weeks), use a hydrometer to check the specific gravity. If stable, transfer the beer into clean bottles, adding priming sugar if carbonation is desired. Cap the bottles.

Bottling

Allow the bottled beer to condition at room temperature for about 1-2 weeks. After this, refrigerate before serving.
