Start by heating 5 gallons of filtered water in a large brew kettle to around 165°F (74°C). This will be used for mashing the grains.

Heat Water

Once the water is at the right temperature, add the Pale Malt, Caramel Malt, and Wheat Malt to the kettle. Stir well to ensure there are no dry clumps. Maintain the temperature between 150°F to 155°F (65°C to 68°C) for 60 minutes.

Mashing

After mashing, raise the temperature to 170°F (77°C) to sparge the grains. This will help extract the sugars from the grains. Rinse the grains with heated water until you collect around 6.5 gallons of wort.

Sparging

Bring the wort to a boil, then add the Hallertau Hops. Boil for 60 minutes, adding the Tettnang Hops in the last 15 minutes of the boil.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermenter and pitch the Ale Yeast. Seal the fermenter with an airlock.

Fermenting

Allow the beer to ferment at room temperature for about 2 weeks or until fermentation activity has stopped.

Fermentation

Once fermentation is complete, bottle the beer using sanitized bottles and caps. Allow the bottles to carbonate for another 1-2 weeks at room temperature.

Bottling

After carbonation, chill the bottles in the refrigerator before serving. Enjoy your homemade Philly Standard!
