In a large brew kettle, heat 3 gallons of filtered water to about 165°F (74°C).

Prepare the Mash

Add the pale malt, crystal malt, and Munich malt to the heated water. Stir well to ensure there are no dry clumps.

Add the Malts

Maintain the mash temperature around 152°F (67°C) for 60 minutes.

Mash the Grains

After the mash, sparge the grains with an additional 2 gallons of hot water to extract the sugars.

Sparging

Boil the Wort

Once boiling, add the Citra hops and boil for 60 minutes.

Add Hops

With 15 minutes left in the boil, add the Simcoe and Mosaic hops.

Add More Hops

At the end of the boil, add the Amarillo hops and turn off the heat.

Finish with Hops

Cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

Transfer the cooled wort to a sanitized fermenter.

Transfer to Fermenter

Sprinkle the American Ale yeast into the fermenter.

Pitch the Yeast

Seal the fermenter and allow it to ferment for about 2 weeks at 68-72°F (20-22°C).

Once fermentation is complete, sanitize your bottles and caps.

Prepare for Bottling

Siphon the beer into the bottles, leaving about an inch of headspace.

Bottle the Beer

Cap the bottles securely and store them at room temperature for carbonation.
