Lager - Mexican, 4.5% ABV, 18 IBU from Grupo Modelo, Ciudad de México, Ciudad de México

In a large pot, combine the Pilsner malt and flaked corn with 12 cups of water. Heat the mixture to 150°F (65°C) and hold for 60 minutes, stirring occasionally.

Prepare the Mash

After mashing, sparge the grains with hot water (around 170°F or 77°C) to collect approximately 6-7 cups of wort.

Sparging

Bring the collected wort to a boil. Once boiling, add the Saaz hops and boil for 60 minutes. Remove from heat and cool the wort quickly to around 70°F (21°C).

Boiling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Add the lager yeast and stir gently to incorporate. Seal the vessel and let it ferment at around 50°F (10°C) for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of water and add it to the beer. Transfer the beer into bottles, seal, and let them carbonate at room temperature for another 1-2 weeks.

Carbonation

If you want to add some freshness, you can incorporate lime zest and chopped cilantro into the bottles before sealing them.
