Ensure all brewing equipment, including the fermenter, airlock, and bottles, are thoroughly cleaned and sanitized to prevent contamination.

Clean and Sanitize Equipment

Crush the Pale Malt, Roasted Barley, Chocolate Malt, and Crystal Malt using a grain mill or a rolling pin, until they are coarsely ground.

Prepare Your Grains

In a large brew kettle, heat 3 gallons of water to 165°F (74°C). Add the crushed grains and stir well. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Mash the Grains

After mashing, sparge the grains with an additional 2 gallons of hot water (170°F/77°C) to extract the sugars. Collect the liquid (wort) in the kettle.

Sparging

Bring the wort to a boil. Once boiling, add the East Kent Goldings hops and boil for 60 minutes. Add the Fuggle hops during the last 15 minutes of the boil.

Boil the Wort

After the boil, cool the wort as quickly as possible using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter. Add the cold brew coffee and sprinkle the Irish Ale Yeast on top. Seal the fermenter and place it in a dark, cool area.

Fermentation

After fermentation is complete (about 1-2 weeks), dissolve the priming sugar in a small amount of boiling water and cool it. Add this to the bottling bucket.

Prepare for Bottling

Siphon the beer from the fermenter into the bottling bucket, mixing gently with the priming sugar. Fill sanitized bottles, leaving about an inch of space at the top, and cap them.

Bottle the Beer

Store the bottles in a dark, cool place for at least 2 weeks to carbonate. After carbonation, chill the bottles before serving.
