In a large brewing kettle, heat 19 liters of water to approximately 70°C (158°F). Once heated, add 4 kilograms of Pilsner malt and 0.5 kilograms of rice. Stir well to ensure all grains are wet and then maintain a temperature of 65°C (149°F) for 60 minutes.

Step 1: Prepare the Mash

After the mash has rested for 60 minutes, drain the liquid (wort) from the mash tun into a separate kettle. Sparge with additional hot water to extract as much sugar as possible from the grains.

Step 2: Lautering

Bring the wort to a boil and add 100 grams of noble hops. Boil for 60 minutes, adding additional hops as desired for flavor and aroma in the last 15 minutes of the boil.

Step 3: Boiling the Wort

After boiling, quickly cool the wort using a wort chiller or an ice bath until it reaches about 20°C (68°F).

Step 4: Cooling the Wort

Transfer the cooled wort into a sanitized fermentation vessel. Pitch 1 packet of Pilsner yeast and seal the vessel with an airlock. Allow it to ferment at a stable temperature of 12-15°C (54-59°F) for about 2 weeks.

Step 5: Fermentation

Once fermentation is complete, dissolve 100 grams of priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them. Allow the bottles to carbonate for 1-2 weeks at room temperature.

Step 6: Bottling

After carbonation is complete, chill the bottles in the refrigerator. Serve cold and enjoy your homemade Labatt Blue!
