Milling the grains helps to expose the starches inside the malt. Use a grain mill to crush the Pale Malt and Caramel Malt into a coarse powder.

Milling the Grains

In a large mash tun, combine the milled grains with 5 gallons of filtered water. Heat the mixture to 152°F (67°C) and maintain that temperature for 60 minutes. Stir occasionally to ensure even temperature distribution.

Mashing

After mashing, sparge the grains with hot water (around 170°F or 77°C) to extract additional sugars. Collect the wort in a kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add the bittering hops and continue boiling for 60 minutes.

Boiling the Wort

With 15 minutes left in the boil, add the flavor hops to the kettle. This will impart aroma and flavor to the lager.

Flavor Hops Addition

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath. Transfer cooled wort to a sanitized fermentation vessel.

Cooling and Transferring

Sprinkle the yeast over the cooled wort and seal the fermentation vessel with an airlock. Allow the beer to ferment in a dark, cool area for 1-2 weeks or until fermentation is complete.

Pitching Yeast

Once fermentation is finished, mix a small amount of sugar with some water (priming solution) to carbonate the beer. Transfer the beer to sanitized bottles, leaving some headspace at the top, and cap the bottles.

Priming and Bottling

Allow the bottled beer to condition for 2-3 weeks at room temperature for carbonation to develop before refrigerating and enjoying.
