Blonde, 5.2% ABV, 15 IBU from New Belgium Brewing Company, Fort Collins, CO

Heat 5 gallons of filtered water to approximately 165°F (74°C) in a large brew kettle.

Prepare the Mash

Add 8 cups of pale malt and 1 cup of caramel malt to the heated water and stir well. Maintain the temperature around 150°F (65°C) for 60 minutes.

Add the Malt

After 60 minutes, slowly drain the wort and rinse the grains with additional hot water (around 170°F or 77°C) until you collect about 6 gallons of wort.

Sparging

Bring the collected wort to a boil and add 1 oz of Cascade hops. Boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add 0.5 oz of Centennial hops to the wort.

Add Centennial Hops

After 60 minutes of boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the American Ale yeast.

Transfer to Fermenter

Seal the fermenter with an airlock and let it ferment at room temperature for about 1-2 weeks or until fermentation is complete.

Ferment

Once fermentation is complete, prepare your bottles and caps. Optionally, add priming sugar to carbonate the beer.

Prepare for Bottling

Siphon the beer into bottles, leaving about an inch of headspace, and cap them securely.

Bottle the Beer

Store the bottles in a cool, dark place for about 2 weeks to carbonate and develop flavors.

Let the Beer Age

After aging, chill the bottles in the refrigerator, pour into a glass, and enjoy your homemade Fat Tire Ale!
