In a large brew kettle, heat 6 gallons of water to 165°F. Add the crushed Pale Malt, Crystal Malt, and Carapils Malt to the water, stirring to ensure all grains are submerged. Maintain a temperature of 152°F for 60 minutes.

Prepare the Mash

After the mash is complete, heat the wort to 170°F. Use a lauter tun to separate the liquid wort from the grain. Collect the wort in a brew kettle.

Lautering

Bring the collected wort to a boil. Once boiling, add 1 oz of Chinook Hops, followed by 1 oz of Centennial Hops after 30 minutes of boiling. Boil for a total of 60 minutes.

Boil the Wort

After 60 minutes, turn off the heat and add 1 oz of Amarillo Hops and 1 oz of Citra Hops for aroma and flavor. Stir well.

Add Flavor Hops

Immediately cool the wort using a wort chiller or an ice bath until it reaches 70°F.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the California Ale Yeast. Seal the vessel with an airlock.

Pitch the Yeast

Allow the beer to ferment at around 68°F for 1-2 weeks or until fermentation is complete.

Fermentation Period

Once fermentation is complete, bottle the beer with priming sugar to carbonate. Let the bottles condition at room temperature for an additional 1-2 weeks.
