    Trim and cube

    Pat the steak dry with paper towels. Trim excess fat if desired. Cut the steak across the grain into 1-inch cubes for tender bites.

    Season

    Place the steak cubes in a bowl. Add 1 tablespoon of olive oil, 1 tablespoon of everything bagel seasoning, kosher salt, and black pepper. Toss to coat evenly so the seasoning adheres to the meat.

    Marinate briefly

    Let the seasoned steak rest at room temperature for 10–15 minutes (or refrigerate up to 1 hour) to absorb flavors. If refrigerating, bring back to room temperature for 15–20 minutes before cooking.

    Prepare pan and marinade

    In a small bowl combine the remaining 2 tablespoons olive oil, soy sauce, and lemon juice. Keep this mixture nearby for finishing the cooked steak bites.

    Sear the steak bites

    Heat a large heavy skillet or cast-iron pan over medium-high heat until very hot. Add the seasoned steak cubes in a single layer—work in batches if necessary to avoid crowding. Sear without moving for 1.5–2 minutes to develop a crust, then flip and sear an additional 1.5–2 minutes for medium-rare to medium (adjust time for desired doneness). The exterior should be well-browned and crisp where the seasoning has toasted.

    Finish with sauce and butter

    When the steak is nearly done, reduce heat to medium. Pour the prepared soy/olive mixture over the steak bites and add the butter. Toss in the pan for 30–45 seconds so the butter melts and the sauce coats the steak, slightly glazing the everything seasoning and toasting the minced garlic and onion in the blend.

    Rest and garnish

    Remove the steak bites to a warm plate and let rest for 2–3 minutes. Taste and, if needed, sprinkle the remaining 1 tablespoon of everything bagel seasoning over the top for extra crunch and flavor. Garnish with chopped chives or green onions if using. Serve immediately.
