Prepare pan and mise en place

Measure and arrange all ingredients. Preheat oven to 375°F (190°C) if you plan to finish meatballs in the oven.

Soak breadcrumbs: In a small bowl combine the breadcrumbs and milk; let sit 3–5 minutes until milk is mostly absorbed and mixture is moistened.

Combine aromatics and binders: In a large mixing bowl add the grated onion, minced garlic, chopped parsley, Dijon mustard, Worcestershire sauce, egg, soaked breadcrumbs (including any residual milk), salt, pepper, dried oregano, and red pepper flakes if using. Stir to combine.

Add meats: Add the ground venison and ground pork to the bowl. Using your hands or a fork, gently mix just until ingredients are evenly distributed. Do not overwork — overmixing will make the meatballs dense. Mix about 20–30 gentle turns.

Chill briefly: Cover the bowl and refrigerate for 15–30 minutes to let the mixture firm up slightly (this makes shaping easier and helps flavors meld).

Shaping and cooking

Shape meatballs: Lightly oil your hands or wet them with cold water. Portion about 1.25–1.5 tablespoons of mixture for each meatball to make roughly 1-inch (bite-size) or 1.5 tablespoons for slightly larger. Roll gently between your palms to form smooth balls, about 24–28 small meatballs or 16–18 medium.

Heat pan: Place a large skillet over medium-high heat and add the olive oil. When shimmering, add the butter if using.

Brown meatballs: Add meatballs in a single layer without crowding the pan (work in batches if necessary). Cook, turning occasionally, until golden-brown on most sides, about 6–8 minutes total. Venison is lean — browning builds flavor. If pieces are large, brown 8–10 minutes.

Finish cooking: You can either finish the meatballs in the skillet by lowering heat to medium and covering for 6–8 minutes until internal temperature reaches 160°F (71°C), or transfer the browned meatballs to a sheet pan and bake in preheated 375°F (190°C) oven for 8–12 minutes until 160°F (71°C) internal. Use an instant-read thermometer for accuracy.

Remove cooked meatballs: Transfer finished meatballs to a warm plate and tent with foil.

Deglaze pan: With the skillet still over medium heat, add the red wine to the pan juices and scrape up browned bits with a wooden spoon. Reduce by half, about 2–3 minutes.

Add stock and tomato paste: Stir in the stock, tomato paste, and fresh thyme/rosemary. Simmer gently until sauce reduces and slightly thickens, 4–6 minutes.

Thicken if desired: If you want a thicker glaze, mix the cornstarch and cold water to make a slurry, then whisk into the simmering sauce and cook 1–2 minutes until glossy and slightly thickened.

Finish sauce: Taste and adjust seasoning with salt and pepper. Stir in the reserved butter for shine if desired. Return meatballs to the skillet and spoon sauce over them to coat and warm through for 1–2 minutes.

Serve suggestions: Serve meatballs hot with the pan sauce over mashed potatoes, creamy polenta, pasta, or in a sandwich. Garnish with additional chopped parsley.
