Make fresh mango purée (if not using store-bought)
Peel and dice one ripe mango (about 1 cup diced). Place mango pieces in a blender and puree until smooth. If necessary, add 1–2 teaspoons of water to help blend. Strain through a fine mesh sieve if you prefer a silkier texture. Measure 3 oz (about 6 Tbsp) for the recipe.
Combine cocktail
Fill a cocktail shaker halfway with ice (about 1 cup). Add 3 oz blanco tequila, 0.5 oz reposado tequila (optional), 3 oz fresh mango purée, 1 oz fresh lime juice, 1 oz Cointreau or triple sec, 0.5 oz agave nectar, 0.25 oz simple syrup (optional), and 2 dashes orange bitters. The reposado and bitters are optional but add depth and complexity.
Shake
Secure the shaker lid and shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosted. Vigorous shaking helps incorporate the mango purée and chill the drink quickly.
Assemble and serve
Fill the chilled prepared glasses with fresh ice (about 1/2 cup per glass). Double-strain the margarita into the glasses using a cocktail strainer and a fine mesh strainer to remove mango fibers and small ice shards. Garnish each glass with a mango slice on the rim and, if desired, a lime wheel. Serve immediately.
Adjust sweetness (optional)
Taste one cocktail and, if needed, adjust sweetness by stirring in an additional 1/4 oz agave nectar or simple syrup per serving. If the cocktail is too strong, add a splash (0.25 oz) of fresh orange juice or a teaspoon of water and stir gently.
Batch preparation (optional)
To make a pitcher for a party (approx. 8 servings), multiply ingredients by 8, blend mango purée in advance, combine all liquid ingredients in a large pitcher with plenty of ice, stir briefly, and keep chilled. Do not over-dilute; add ice to glasses when serving.
