Method
Prepare Base & Puree
If using fresh mango, peel and chop about 1 small mango and blend until smooth to yield approximately 1/2 cup. If using store-bought mango puree, measure 1/2 cup. Chill puree briefly if not already cold.
Combine pineapple juice (1 cup), orange juice (1/2 cup), mango puree (1/2 cup) and lime juice (1 tablespoon) in a cocktail shaker or large jar. If you prefer a sweeter drink, add simple syrup or agave (1 teaspoon).
Fill the shaker with ice, cap, and shake vigorously for 8–12 seconds to chill and lightly dilute the mixture. If you don’t have a shaker, stir vigorously in a jar until well chilled.
Assemble & Create Lava Effect
Fill a highball or tall glass with crushed ice (about 1 cup). Leave a little room at the top for the sparkling water and passion fruit.
Strain the shaken fruit mixture over the crushed ice, leaving about 1 inch of headspace.
Add Sparkle
Top the drink with chilled club soda or sparkling water (about 3 oz). Pour gently to preserve bubbles.
Create Lava
Spoon the passion fruit pulp (2 tablespoons) slowly over the top of the drink. The seeds and syrup will sink and swirl through the bright fruit base, creating a lava-like effect. For a more dramatic presentation, use a small spoon to drop the pulp in three separate spots so it streams down.
Garnish & Serve
Garnish the rim with a pineapple wedge and a lime wheel. Add a fresh mint sprig for aroma. Optionally, slap the mint between your palms first to release oils.
Serve immediately with a straw and a long spoon so guests can stir the passion fruit into the drink if they want a more uniform flavor.
