Prepare Glass

If using a chilled souvenir mug or glass, rinse with cold water and set aside. Fill the mug about three-quarters full with cracked or crushed ice so the drink will be well chilled.

Mix Cocktail Base

Combine ingredients

In a cocktail shaker, add light rum, fresh orange juice, lilikoi (passion fruit) juice, pineapple juice, fresh lime juice, orgeat, and orange curaçao. Add a generous handful of ice to the shaker.

Shake

Secure the shaker and shake vigorously for 10–15 seconds until the exterior of the shaker is frosty and well-chilled. This both chills and slightly dilutes the drink to balance the flavors.

Strain into glass

Strain the mixed cocktail over the crushed ice already in the souvenir mug, leaving a small gap at the top for the dark rum float.

Float & Garnish

Float dark rum

Using the back of a bar spoon, slowly pour the 0.5 oz dark rum over the top of the drink so it floats as a darker layer on the surface.

Garnish

Garnish with a pineapple wedge and lime wheel on the rim, tuck a mint sprig into the top of the ice (lightly slap the mint between your palms first to release aroma), and top with a maraschino cherry. Optionally present with a paper umbrella and a reusable straw.

Serve immediately with a straw and a small spoon for stirring if the guest wants to mix the dark rum into the drink.
