Build and shake
Fill a cocktail shaker halfway with ice. Add 2 oz pineapple vodka, 1 oz fresh pineapple juice, 0.5 oz fresh lime juice and 0.5 oz simple syrup. Secure the lid and shake vigorously for 10–12 seconds until well chilled.
Strain and top
Fill a highball or Collins glass with fresh ice (about 1 cup). Double-strain the shaken mixture into the glass to remove small ice shards and pulp. Top gently with 6 oz High Noon pineapple hard seltzer (or substitute). Stir once gently with a bar spoon to combine without flattening the seltzer.
Finish
Garnish with a pineapple wedge and a lime wheel on the rim and tuck a mint sprig beside them. Serve immediately with a straw if desired.
Notes
For a lighter drink, reduce the vodka to 1.5 oz and increase seltzer by 1–2 oz. If you prefer less sweetness, omit or reduce the simple syrup. Use chilled seltzer for best fizz retention.
