Method
Prepare the Filling
Prepare vegetables: peel and grate or julienne the carrot to make 1 cup; thinly shred 2 cups cabbage; slice mushrooms to yield 3 oz; rinse and drain 1 cup bean sprouts; thinly slice 3 green onions; mince 2 cloves garlic and 1 tsp fresh ginger.
Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat until shimmering.
Add minced garlic and ginger; stir-fry 15–20 seconds until fragrant, taking care not to burn.
Add mushrooms and cook 1–2 minutes until they soften and release liquid.
Add shredded carrot and cabbage. Stir-fry 2–3 minutes until cabbage softens but still has some bite.
Stir in bean sprouts and sliced green onions, cook 30–45 seconds—just to warm through.
Season the filling with 2 tablespoons soy sauce, 1 teaspoon sesame oil, and 1 teaspoon white or black pepper. Toss to combine and cook another 15–30 seconds.
Remove pan from heat and let the filling cool for 8–10 minutes. If the filling is very moist, transfer to a sieve or spread on a tray to cool and drain briefly.
Assemble the Spring Rolls
Make cornstarch slurry: mix 2 teaspoons cornstarch with 2 teaspoons cold water until smooth. This will act as the glue for sealing wrappers.
Lay one spring roll wrapper on a clean work surface with one corner pointing toward you (diamond shape). Keep remaining wrappers covered with a damp cloth to prevent drying.
Place about 2–3 tablespoons of the cooled filling near the corner closest to you, leaving about 1 inch of space at the edges.
Folding
Fold the bottom corner over the filling, tuck snugly, then fold both side corners toward the center.
Brush the top corner edge with a little cornstarch slurry and roll tightly away from you to seal. Repeat with remaining wrappers and filling. You should get about 12 rolls depending on filling amount.
Place assembled rolls seam-side down on a tray; chill in the refrigerator 10–15 minutes to firm up (optional but helps keep shape during frying).
Pan-Fry the Rolls
Pour about 1 cup vegetable oil into a large, heavy skillet (cast iron or stainless steel) and heat over medium heat to 350°F (175°C) if using a thermometer. If not, test by dropping a small piece of wrapper into the oil — it should sizzle and become golden in about 15–20 seconds.
Working in batches (do not overcrowd), place 3–4 spring rolls seam-side down in the hot oil. Fry 2–3 minutes per side, turning with tongs or a spatula, until evenly golden brown and crisp. Adjust heat as needed so they brown without burning.
Transfer fried rolls to a wire rack or paper towel-lined plate to drain. Repeat with remaining rolls.
If you prefer a lighter finish, you can finish rolls briefly in a preheated 375°F (190°C) oven for 3–4 minutes to ensure crispness without additional oil.
Serve
Arrange spring rolls on a platter. Serve hot with 1 cup sweet Thai chili sauce for dipping.
Garnish with chopped cilantro and lime wedges if using. Squeeze lime over rolls to taste.
