Prepare equipment

Line a small baking sheet with parchment paper or place a clean tray nearby for molded pieces. Place your diamond mold on the tray so you can move it easily to the refrigerator. Finely chop the chocolate and place it in a heatproof bowl. Measure the cream, butter, corn syrup, salt, and vanilla so they're ready to use.

If using nuts for garnish, toast them in a dry skillet over medium heat for 4–6 minutes, shaking frequently until fragrant and lightly browned. Cool and chop finely. Sift cocoa powder (and powdered sugar if using) into a shallow dish for dusting.

Make the ganache

Heat cream

Place the heavy cream in a small saucepan and heat over medium until it just begins to simmer and small bubbles form at the edge (do not boil) — about 3–4 minutes. Remove from heat immediately.

Combine with chocolate

Pour the hot cream over the chopped chocolate so the chocolate is evenly covered. Let sit undisturbed for 2 minutes to soften the chocolate.

Emulsify

Using a whisk or a rubber spatula, begin stirring slowly from the center in small concentric circles, gradually widening until the mixture becomes glossy and smooth and the chocolate is fully melted. If any unmelted pieces remain, microwave the bowl in 10-second bursts, stirring between bursts, until smooth (no more than 20–30 seconds).

Finish ganache

Add the softened butter, corn syrup, salt, and vanilla to the warm ganache. Stir until butter is fully incorporated and the ganache is silky. Taste and adjust salt if needed. Let the ganache cool at room temperature for 20–30 minutes, stirring occasionally, until it thickens slightly but is still pourable.

Molding & chilling

Fill molds

If you want very clean edges, lightly oil the mold or line with a thin sheet of plastic wrap. Pour or pipe the slightly cooled ganache into the diamond-shaped cavities, filling each to the top. Tap the mold gently on the counter to release trapped air bubbles and level the surface.

Chill

Cover the filled mold loosely with plastic wrap and refrigerate until the ganache is set and firm to the touch — about 1.5 to 2 hours. For faster setting, place in the freezer for 30–45 minutes (check after 20–30 minutes to avoid freezing solid).

Unmolding & finishing

Unmold

Remove the mold from the fridge or freezer and gently invert onto the prepared tray. Push gently on the back of each cavity to release the diamonds. If lined with plastic wrap, peel the wrap away carefully.

Trim & dust

If any edges are rough, use a warm small knife to trim gently. Lightly dust each chocolate with unsweetened cocoa powder using a fine sieve for a velvety finish. If desired, dust lightly with powdered sugar on alternate pieces or press a few chopped toasted nuts onto selected diamonds while the ganache is still slightly tacky so they adhere.

Place finished Chocolate Decadence Diamonds in an airtight container, separated by parchment if stacking, and refrigerate for up to 2 weeks. For best texture, serve at cool room temperature by removing from fridge 15–20 minutes before serving.
