Prepare

Chill a coupe or Nick & Nora glass in the freezer or fill it with ice water while you build the cocktail.

Dry shake (if using egg white)

Add gin, creme de violette, fresh lemon juice, simple syrup and the egg white to a cocktail shaker. Seal and shake vigorously without ice for about 15 seconds to emulsify and create foam.

Wet shake

Add the ice cubes to the shaker, seal and shake hard for 12–15 seconds until the outside of the shaker is very cold and well-aerated.

Strain

Discard ice from the chilled glass if used for chilling. Double-strain the cocktail into the chilled coupe using a Hawthorne strainer and a fine-mesh sieve to remove ice shards and any thicker foam bits.

Garnish & serve

Express a lemon twist over the surface to release oils, rub it on the glass rim and drop it in (or place a cocktail cherry). Serve immediately.
