Method
Ahi tartare
Prepare tuna
Keep the sushi-grade ahi tuna chilled until ready. Pat dry with paper towels and trim any sinew. Using a very sharp knife, finely dice the tuna into small 1/8–1/4 inch pieces. Transfer to a chilled bowl.
Mix aromatics and seasoning
Add the minced shallot, chopped capers, and chopped parsley to the diced tuna. Add the olive oil, lemon juice, soy sauce, and Dijon mustard. Gently fold to combine so the tuna remains tender. Season with the measured sea salt and black pepper, tasting and adjusting if necessary.
Finish with truffle
Just before assembling, add 2–3 drops of white truffle oil to the tartare and fold once to distribute. Do not over-oil; truffle flavor should be subtle. Keep the tartare chilled while preparing crostini and avocado mash.
Avocado mash
Halve and pit the avocado. Scoop flesh into a bowl and mash gently with a fork until mostly smooth but slightly rustic (small lumps are good). Add the lemon or lime juice, a pinch of salt and pepper, and mix. Taste and adjust seasoning. Keep at room temperature briefly while toasting bread — avoid overly long exposure to air to limit browning.
Crostini & assembly
Garlic rub
While the toasts are still warm, rub the cut side of the garlic clove over each slice to impart a mild garlic aroma. This gives a subtle background note without overpowering the tartare.
Build toast
Spread about 1 to 1 1/2 tablespoons of the avocado mash onto each crostini, leaving a small border. Using a spoon or ring mold, mound about 1 1/2 to 2 ounces (roughly 3–4 tablespoons) of the truffle-scented ahi tartare on top of the avocado layer for each crostini. Press gently so the tartare adheres to the avocado.
Garnish and serve
Finish each toast with a couple extra chopped capers and a light sprinkle of microgreens or chives. Optionally, add a small grind of black pepper and a tiny drizzle (1–2 drops) more truffle oil over the top if desired. Serve immediately with lemon wedges on the side to squeeze over just before eating.
