Queso Base

Prepare jalapeños
Stem and halve 2 fresh jalapeños. Remove seeds for milder heat or leave some for more spice. Finely dice one jalapeño (about 1/4 cup) for mixing into the queso and reserve the other to finely chop for topping if desired.

In a medium saucepan over medium heat, melt 1 tablespoon unsalted butter. Add 1 teaspoon minced garlic and the diced fresh jalapeño; sauté for 30–45 seconds until fragrant, stirring so garlic doesn't brown.

Slowly whisk in 1 cup whole milk and 1/2 cup heavy cream, whisking constantly to incorporate and smooth any lumps. Increase heat to medium-high and bring the mixture to a gentle simmer (do not boil).

Reduce heat to low. Add 8 oz white American cheese (cut into small pieces or shredded) and 4 oz finely shredded sharp white cheddar in small handfuls, stirring until fully melted and smooth before adding more. Stir in 2 tablespoons chopped pickled jalapeños and 2 tablespoons drained canned green chilies, if using, to boost flavor and texture.

Stir in 1/2 teaspoon ground cumin, 1 teaspoon kosher salt, 1/4 teaspoon freshly ground black pepper and 1 tablespoon fresh lime juice. Taste and adjust seasoning — add more salt or a splash more lime if desired. Keep queso warm over the lowest heat, stirring occasionally to maintain smoothness; if it becomes too thick, stir in up to 2 tablespoons additional milk.
Pico de Gallo

Combine 1 cup finely diced roma tomatoes, 1/4 cup finely diced red onion, 2 tablespoons chopped fresh cilantro, 1 tablespoon fresh lime juice, 1/4 teaspoon kosher salt, and 1/4 minced jalapeño in a small bowl. Stir to combine and let sit 10–15 minutes at room temperature to allow flavors to meld. Taste and adjust salt or lime as needed.
Guacamole

In a medium bowl, mash the flesh of 2 ripe avocados with a fork leaving some texture. Add 1 tablespoon chopped cilantro, 1 tablespoon fresh lime juice, 1/2 teaspoon salt, 1/2 teaspoon minced garlic and 2 tablespoons finely diced tomato (optional). Stir to combine and taste; adjust salt or lime as needed. Cover with plastic wrap pressed to the surface or keep in an airtight container until ready to serve to minimize browning.
Seasoned Tortilla Chips

If using store-bought chips, spread 8 oz chips in a large bowl. Lightly drizzle with 1 teaspoon vegetable oil (optional) and sprinkle 1/2 teaspoon chili powder, 1/4 teaspoon smoked paprika, and 1/4 teaspoon kosher salt. Toss gently to evenly coat. If you prefer, warm chips on a baking sheet at 325°F (160°C) for 6–8 minutes to make them crisp and to toast the seasonings (watch closely to avoid burning).
Assembly & Serving

Transfer the warm queso to a shallow serving bowl. Spoon a ring or three dollops of guacamole around the center or to one side. Add 2–3 tablespoons of pico de gallo on top or alongside the queso. Sprinkle the reserved chopped jalapeño (from earlier) and 1/4 cup chopped cilantro over the top for freshness and color.

Serve immediately with the seasoned tortilla chips. Keep queso warm on a low setting or in a small slow cooker if serving for a crowd; stir occasionally to maintain consistency. Leftover queso can be cooled, refrigerated up to 3 days and gently reheated over low heat with a splash of milk to restore creaminess.
