Make the base mixture
In a medium bowl, whisk together 2 cups vanilla yogurt, 1 cup whole milk, 3 tablespoons honey (or maple syrup), and 1 teaspoon vanilla extract until smooth and slightly thin. The texture should be pourable but still creamy.

Chill briefly
If mixture is warm, refrigerate for 10 minutes so it’s cold before combining with frozen fruit. Cold base helps freeze faster and gives a smoother texture.

Prepare frozen fruit
Combine 2 cups frozen mixed berries, 1 cup frozen banana slices, and 1 cup frozen mango chunks in a large bowl. Toss gently to distribute fruit evenly. If any pieces are large, break them into smaller chunks with a spoon so they blend evenly.

Blend for smoothie-frozen texture
Working in a high-speed blender or food processor, add half of the frozen fruit mixture and about half of the base mixture. Pulse or blend in 10–20 second bursts until broken down but still thick. Scrape sides and add remaining fruit and base, blending until you reach a thick, soft-serve consistency (stop intermittently to avoid overheating). You want a scoopable, slightly icy texture.

Fold in mix-ins
Transfer blended frozen base to a mixing bowl and gently fold in 1 tablespoon mini chocolate chips and 1 tablespoon crushed graham crackers or granola so they’re distributed but don’t melt or dissolve.

Freeze to set
Spoon the mixture into a shallow airtight container and smooth the top. Press a piece of parchment directly on the surface to minimize ice crystals. Freeze for 1–2 hours for a soft-serve consistency or 3–4 hours for a firmer scoopable texture.

If using toasted coconut, lightly toast 1 tablespoon coconut flakes in a dry skillet over medium heat for 2–3 minutes until golden—watch carefully. Chop 1 tablespoon nuts if needed.

Scoop the frozen treat into bowls or cones. Sprinkle toasted coconut flakes, chopped nuts, fresh mint leaves, and 1 teaspoon sprinkles as desired. If the frozen mixture is very hard, let sit 3–5 minutes at room temperature before scooping.
