Method
Prepare & Mix
- 1
Combine ingredients
Add the white rum, orange curaçao, fresh lime juice, pineapple juice, orange juice and simple syrup into a cocktail shaker or mixing tin.
- 2
Add ice and bitters
Fill the shaker with crushed ice (about 1 cup) and add 2 dashes of Angostura bitters.
- 3
Shake
Secure the shaker lid and shake vigorously for 10–15 seconds until the outside of the shaker is frosty and well chilled.
Serve & Finish
- 4
Strain over ice
Fill a double old-fashioned glass or a tall Collins-type glass with fresh crushed ice. Strain the shaken mixture into the glass over the ice.
- 5
Float dark rum
Carefully float the 1/2 oz dark rum on top by pouring it slowly over the back of a bar spoon so it sits as a darker layer above the drink.
- 6
Garnish and present
Garnish with a pineapple wedge, maraschino cherry and a lime wheel. Optionally slap the lime between your hands to release aroma before placing it on the glass.
- 7
Serve immediately with a straw. Encourage the drinker to sip through the float so flavors evolve as they drink.
