Prepare the Noodles

Soak the jelly noodles in hot water for about 15 minutes or until softened. Drain and set aside.

Cook the Proteins

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the sliced chicken breast and cook until no longer pink. Add the shrimp and cook until they turn pink. Remove from the skillet and set aside.

Scramble the Eggs

In the same skillet, add another tablespoon of oil. Beat the eggs in a bowl and pour into the skillet. Scramble until cooked through, then remove and set aside.

Stir-fry the Vegetables

In the same skillet, add the carrots, green peas, baby corn, and scallions. Stir-fry for 3-4 minutes until tender.

Combine Ingredients

Add the soaked jelly noodles, cooked chicken, shrimp, and scrambled eggs back into the skillet. Pour in the soy sauce and oyster sauce. Toss everything together to combine and heat through.

Finish and Serve

Add bean sprouts, and season with salt and pepper to taste. Stir-fry for another minute, then remove from heat and serve hot.
