In a large brew kettle, heat 3 gallons of filtered water to around 160°F (70°C). Add the pale malt, caramel malt, and wheat malt to the water. Stir well to ensure all grains are immersed.

Prepare the Mash

Maintain the temperature around 150-155°F (65-68°C) for 60 minutes. Stir occasionally to ensure even heating.

After mashing, sparge the grains with an additional 2 gallons of hot water to collect the wort in the kettle.

Bring the collected wort to a boil. Once boiling, add the Citra hops and boil for 15 minutes.

After 15 minutes, add Mosaic hops and Simcoe hops. Continue to boil for another 10 minutes.

Remove the kettle from heat and cool the wort quickly using an immersion chiller or an ice bath.

Once cooled, transfer the wort to a sanitized fermenter. Add the American Ale yeast and stir gently to mix.

In the fermenter, add the citrus zest and tropical fruit puree. Seal the fermenter with an airlock.

Allow the beer to ferment at a temperature of 65-70°F (18-21°C) for about 1-2 weeks, or until fermentation activity has ceased.

Fermentation Process

While the beer is fermenting, sanitize your bottles and caps. Boil 3/4 cup of priming sugar in 2 cups of water to create a sugar solution.

Once fermentation is complete, gently siphon the beer into the bottles, leaving about an inch of headspace. Add the priming sugar solution to each bottle before capping.

Bottle the Beer

Cap the bottles and let them carbonate at room temperature for 1-2 weeks.
