In a large mash tun, combine 4 cups of Pale Malt, 1 cup of Wheat Malt, and 0.5 cups of Caramel Malt with 5 liters of filtered water. Heat to 66°C (150°F) and maintain this temperature for 60 minutes.

Prepare the Mash

After the mash, sparge with hot water to collect enough wort in your brew kettle, aiming for around 3.5 liters of liquid.

Sparging

Bring the wort to a boil, then add 1 oz of Citra Hops, 1 oz of Mosaic Hops, and 0.5 oz of Amarillo Hops. Boil for 60 minutes.

After boiling, cool the wort as quickly as possible to about 20°C (68°F) using a wort chiller or an ice bath.

Cooling the Wort

Once the wort has cooled, transfer it to a sanitized fermenter and pitch 1 pack of American Ale Yeast.

Pitch Yeast

After fermentation begins (about 2-3 days), add 0.5 cups of peach puree, 0.5 cups of guava puree, and 2 tsp of tangerine zest to the fermenter.

After fermentation is complete (about 1-2 weeks), bottle the beer using sanitized bottles and caps, ensuring to leave some space at the top.

Bottle the Beer

Let the bottles carbonate at room temperature for about 1-2 weeks.
