Strawberry Shake

Bursting with ripe lemon citrus notes and hints of passion fruit and basil.

Carefully harvest 2 kg of ripe Sauvignon Blanc grapes and ensure they are free from any damaged or rotten fruit.

Crush the grapes in a sanitized container to release the juice, ensuring the skins remain intact for flavor.

Add 1 liter of water to the crushed grapes to dilute the juice slightly and facilitate fermentation.

Sprinkle 1 gram of yeast over the mixture and gently stir to combine, initiating the fermentation process.

Add 2 tablespoons of lemon zest and 1 cup of passion fruit pulp to the mixture, stirring well to incorporate the flavors.

Infuse Citrus and Passion Fruit

Tear the fresh basil leaves and add them to the mixture to infuse the wine with herbal notes. Let it steep for 24 hours.

If desired, dissolve 100 grams of sugar in a small amount of warm water and add it to the mixture to sweeten the wine to taste.

Sweeten the Wine

Cover the mixture with a clean cloth and let it ferment at room temperature for 1-2 weeks, stirring daily.

Once fermentation has completed, strain the mixture through a fine mesh sieve to remove solids and transfer the liquid into sanitized bottles.

Seal the bottles and let the wine age in a cool, dark place for at least 1 month before serving.
