Aroma of caramel, floral and citrus hops with a good balance of malt and hops.

In a large pot, heat 6 liters of filtered water to 155°F (68°C). Add the Pale Malt, Crystal Malt, and Chocolate Malt to the pot. Stir well to ensure that all grains are saturated.

Prepare the Mash

Maintain the temperature at 155°F (68°C) for 60 minutes. Stir occasionally to prevent clumping.

Mashing Process

After mashing, sparge the grains using 170°F (77°C) water to rinse out the sugars. Collect the wort in a brew kettle.

Sparging

Bring the collected wort to a boil. Once boiling, add the Citra Hops and boil for 60 minutes.

Boil the Wort

With 15 minutes left in the boil, add Amarillo Hops and Simcoe Hops to impart additional flavor and aroma.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter. Pitch the American Ale Yeast into the wort.

Transfer to Fermenter

Seal the fermenter with an airlock and allow it to ferment at a temperature of 68°F to 72°F (20°C to 22°C) for about 1-2 weeks, or until fermentation is complete.

Fermentation Period

Once fermentation is complete, dissolve 0.5 cup of corn sugar in 2 cups of boiling water to create a priming solution.

Prepare for Bottling

Add the priming solution to the fermenter and mix gently to avoid oxidation. Bottle the beer in sanitized bottles and cap them.

Bottle the Beer

Store the bottles in a dark, room temperature area for 1-2 weeks to carbonate.

Condition the Bottles

After conditioning, chill the bottles in the refrigerator for a few hours before serving. Enjoy your homemade MAC & JACK'S AFRICAN AMBER!
