In a large pot, add the filtered water and heat to 150°F (65°C). Add the Pilsner malt and CaraPils malt, stirring well. Maintain the temperature for 60 minutes.

Mashing the Grains

After mashing, sparge the grains with an additional 2 cups of hot water to extract more sugars. Collect the wort in the pot.

Sparging

Bring the wort to a boil. Once boiling, add Saaz hops and Hallertau hops. Boil for 60 minutes, stirring occasionally.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the lager yeast on top and seal the vessel with an airlock.

Pitching the Yeast

After fermentation is complete (about 2 weeks), dissolve the priming sugar in a small amount of water and add to the beer. Bottle the beer, leaving some headspace in each bottle.

Priming and Bottling

Store the bottles in a dark place at room temperature for another 2 weeks to carbonate. After carbonation, refrigerate before serving.
