Mashing

1. Heat the Water

In a large brew kettle, heat 5 gallons of filtered water to about 160°F (71°C).

2. Add the Malts

Once the water reaches the desired temperature, add 8 cups of pale malt, 1 cup of caramel malt, and 0.5 cups of wheat malt to the kettle.

3. Mash the Grains

Stir the grains into the water, ensuring there are no dry clumps. Maintain the temperature at around 152°F (67°C) for 60 minutes.

Boiling

4. Sparge the Grains

After mashing, sparge the grains with hot water to collect the wort in the brew kettle.

5. Bring to Boil

Bring the wort to a boil, then add 1 oz of Cascade hops. Boil for 60 minutes.

6. Add Aroma Hops

With 15 minutes remaining in the boil, add 0.5 oz of Saaz hops for aroma.

Cooling and Fermentation

7. Cool the Wort

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

8. Pitch the Yeast

Transfer the cooled wort to a sanitized fermentation vessel and pitch 1 packet of American ale yeast.

9. Ferment

Seal the fermentation vessel with an airlock and allow it to ferment at room temperature for 1-2 weeks.

Bottling

10. Prepare Priming Sugar

Dissolve 3 oz of corn sugar in 2 cups of boiling water. Let it cool.

11. Bottle the Beer

After fermentation is complete, siphon the beer into sanitized bottles, adding the cooled priming sugar solution to each bottle.

12. Cap and Store

Cap the bottles and store them at room temperature for carbonation for about 1-2 weeks.
