100% Pale malt makes for a super clean finish and highlights the hop flavors and aromas.

In a large brew kettle, heat 5 gallons of filtered water to approximately 165°F (74°C).

Heat Water

Add the 10 cups of Pale Malt to the heated water, stirring well to avoid clumps. Maintain the mash temperature at around 152°F (67°C) for 60 minutes.

Mash In

After mashing, sparge the grains with 170°F (77°C) water to collect enough wort to total 6 gallons.

Sparge

Bring the wort to a rolling boil and maintain for 60 minutes.

Boil Wort

Add 2 oz of Cascade Hops at the start of the boil. After 30 minutes, add 1 oz of Centennial Hops and then add 1 oz of Citra Hops with 5 minutes left in the boil.

After the boiling process, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the American Ale Yeast into the wort. Seal the fermenter with an airlock.

Pitch Yeast

Dissolve 3 oz of Corn Sugar in 2 cups of boiling water to create a priming solution.

Prepare Priming Sugar

After fermentation is complete (about 1-2 weeks), add the priming solution to the beer and bottle it in sanitized bottles. Cap the bottles securely.

Bottle Beer

Let the bottled beer condition at room temperature for another 1-2 weeks before refrigerating.
