Heat 3 gallons of filtered water in your brew kettle to approximately 165°F (74°C).

Prepare the Mash

Add the Pilsner malt and caramel malt to the water, stirring well to avoid clumps. Maintain a temperature of 150°F (65°C) for 60 minutes.

After mashing, sparge the grains with an additional 2 gallons of hot water (around 170°F / 77°C) to collect the wort.

Bring to a Boil

Once boiling, add the Hallertau hops and boil for 60 minutes. Add the Saaz hops in the last 5 minutes of the boil.

Cool the wort quickly using a wort chiller or an ice bath to around 70°F (21°C).

Transfer the cooled wort into a sanitized fermenter and pitch the Kölsch yeast.

Transfer to Fermenter

Seal the fermenter with an airlock and let it ferment at around 65°F (18°C) for 1-2 weeks.

Ferment

Dissolve the corn sugar in 2 cups of boiling water to create a priming solution.

Prepare Bottling Solution

Add the priming solution to the fermenter and gently stir. Bottle the beer using sanitized bottles and caps.

Store the bottles at room temperature for 1-2 weeks to carbonate.
