Grape Selection

Allow the wine to ferment for approximately 2 weeks at a controlled temperature of 70°F (21°C). Monitor the process regularly.

Fermentation

After fermentation is complete, add bentonite clay and sulfites to clarify and stabilize the wine.

Transfer the wine into French oak barrels for aging. Add vanilla beans and smoked oak chips for enhanced flavors.

Aging the Wine

Allow the wine to age in barrels for at least 12 months, tasting periodically to achieve desired flavor complexity.

Once aging is complete, carefully bottle the wine and label it as Caymus Conundrum Red Blend.
