In a large brew kettle, heat 5 gallons of filtered water to about 160°F (71°C).

Malt Preparation

Add the pale malt, caramel malt, and wheat malt to the water. Maintain a temperature of 150°F (65°C) for 60 minutes.

Mashing

After mashing, sparge the grains with hot water (approximately 170°F / 77°C) until you collect around 6.5 gallons of wort.

Sparging

Bring the wort to a boil and add 1 oz of Cascade hops. Boil for 60 minutes.

Boiling

With 15 minutes left in the boil, add 0.5 oz of Citra hops.

Adding Aroma Hops

After the boil, cool the wort quickly using a wort chiller or an ice bath.

Cooling the Wort

Once cooled to about 70°F (21°C), transfer the wort to a sanitized fermentation vessel and pitch the American ale yeast.

Pitching Yeast

Seal the fermentation vessel with an airlock and let it ferment in a dark, cool area for about 2 weeks.

Fermentation Process

Dissolve 3 oz of corn sugar in a small amount of boiling water to create a priming solution.

Priming Sugar Preparation

After fermentation is complete, siphon the beer into sanitized bottles, adding the priming sugar solution to each bottle before filling.

Bottling Beer

Cap the bottles and let them carbonate at room temperature for 1-2 weeks.
