Unfiltered lager with German pilsner malt and floral notes.

In a large pot, heat 5 liters of filtered water to around 70°C (158°F). Add the German Pilsner malt and Carapils malt, stirring well to ensure there are no clumps. Maintain the temperature for 60 minutes.

Prepare the Mash

After the mash period, sparge the grains by rinsing them with additional hot water to extract sugars, collecting the wort in another pot.

Sparging

Bring the collected wort to a boil. Once boiling, add the Hallertau hops and boil for 60 minutes.

Boil the Wort

With 15 minutes remaining in the boil, add the Saaz hops to enhance the floral aroma.

After boiling, cool the wort quickly using a wort chiller or an ice bath to reach a temperature of around 20°C (68°F).

Cool the Wort

Transfer the cooled wort to a sanitized fermenter and pitch the Pilsner yeast. Seal the fermenter with an airlock and allow fermentation to occur at 18-22°C (64-72°F) for about 1-2 weeks.

Fermentation

Once fermentation is complete, siphon the beer into sanitized bottles, adding priming sugar if carbonation is desired. Cap the bottles and allow them to condition for an additional 1-2 weeks.

Bottling

After conditioning, refrigerate the bottles and serve cold. Enjoy your homemade Breakside Pilsner!
