Berry compote

    Rinse and drain the berries. Hull and quarter strawberries if large so pieces are similar in size to other berries.

    Place the 3 cups mixed berries, 1 tablespoon granulated sugar, 1 teaspoon lemon juice, and 2 tablespoons water in a medium saucepan over medium heat.

    Bring to a gentle simmer, stirring occasionally. As the berries warm, they will release juices; gently mash a few with the back of a spoon for a slightly chunky compote. Simmer 4–6 minutes until berries are softened and sauce slightly thickened.

    Stir in 1/2 teaspoon vanilla extract, taste and add up to another 1/2 tablespoon sugar or a little more lemon juice if desired to balance sweetness and acidity.

    Remove from heat and let compote cool to room temperature. Transfer to a bowl and refrigerate if not using immediately (compote keeps covered in fridge up to 3 days).

Crème (vanilla custard-style)

    In a medium saucepan, combine 1 cup whole milk and 1 cup heavy cream. Warm over medium heat until small bubbles form at the edges and steam rises, but do not boil.

    While the milk heats, whisk together 3 tablespoons granulated sugar, 1 tablespoon cornstarch, and a pinch of the 1/8 teaspoon salt in a medium bowl so cornstarch is evenly distributed.

    Add 4 large egg yolks to the sugar-cornstarch mixture and whisk until smooth and slightly pale.

    Temper the yolks: slowly pour about 1/3 of the hot cream mixture into the yolks while whisking constantly to bring yolks up in temperature without scrambling. Then pour the tempered yolk mixture back into the saucepan with the remaining cream, whisking continuously.

    Return saucepan to low–medium heat and cook, stirring constantly with a heatproof spatula or whisk, until mixture thickens and coats the back of the spatula (about 3–5 minutes). Do not let it boil vigorously—small gentle bubbles are fine.

    Remove from heat and stir in 1 teaspoon vanilla bean paste or extract and the remaining pinch of salt. Taste and adjust—if too eggy, cook a little longer off heat while stirring.

    Pour the warm crème through a fine-mesh sieve into a clean bowl to remove any cooked bits. Cover surface with plastic wrap directly on the custard to prevent a skin from forming and let cool to room temperature, then chill in refrigerator at least 1 hour until set and cold.

Assembly & garnish

    Divide the chilled crème evenly among 4 serving glasses or bowls (about 3/4–1 cup each).

    Spoon 1/3 to 1/2 cup of the cooled berry compote over each portion of crème, allowing some sauce and whole berries to remain on top for texture.

    Garnish each serving with 2 small fresh mint leaves and a light dusting of powdered sugar and a sprinkle of lemon zest if using.

    Serve immediately or keep chilled up to 2 days. If stored, add fresh mint and powdered sugar just before serving.
