Method

Bacon Aioli

    Cook the bacon: in a skillet over medium heat, cook 4 slices of bacon until crisp, about 8–10 minutes, turning occasionally. Remove bacon to a paper towel–lined plate and reserve 1 tablespoon of rendered bacon fat. Once cool, chop bacon into small pieces.

    Make the aioli: in a bowl, combine 1 cup mayonnaise, minced garlic (1 tsp), 1 tsp Dijon mustard, 1 tsp smoked paprika, 1 tsp black pepper, 1 tsp lemon juice and 0.25 tsp salt. Stir until smooth.

    Fold in chopped bacon and 1 tablespoon reserved bacon fat. Taste and adjust seasoning. Refrigerate until ready to assemble (can be made up to 24 hours ahead).

Sandwich assembly and toasting

    Prepare croissants

    Preheat a skillet or griddle over medium heat. Spread about 1/2 tbs butter on the cut sides of each croissant. Place croissant halves, butter-side down, on the hot skillet and toast until golden and crisp, 1–2 minutes. Reduce heat if browning too quickly.

    Warm meat and melt cheese

    On the skillet (or in a separate pan), layer the turkey (6 oz) and honey ham (4 oz) and heat just until warm, about 1–2 minutes. Top the warmed meat with Swiss cheese slices (2 per sandwich) and cover briefly with a lid or a stainless bowl to melt the cheese, about 30–45 seconds.

    Cook over-hard eggs

    In a nonstick skillet, heat 1 tablespoon neutral oil over medium. Crack 2 large eggs into the pan (one per sandwich) and immediately reduce heat to medium-low. Sprinkle each egg with 1/8 tsp salt and 1/8 tsp black pepper. Let whites set fully without flipping until edges are cooked, about 2–3 minutes, then carefully flip and press with a spatula to break the yolk and cook through until yolk is firm, about 1–2 more minutes. Remove and blot any excess oil.

    Assemble sandwiches: spread about 2 tablespoons of bacon aioli on the bottom half of each toasted croissant. Place warmed turkey and ham with melted Swiss on top of the aioli. Place the over-hard egg on the cheese so yolk meets the cheese. Spoon an additional 1 tablespoon aioli on the top half of each croissant if desired, then close the sandwich.

    Finish and serve: press lightly to compact the sandwich, slice in half if desired, and serve immediately while warm. Optional: serve with pickles or a side salad.
