Prepare and Chill Glass
If serving in a coupe or rocks glass, place the glass in the freezer or fill with ice water to chill while you prepare the cocktail.

Dry Shake (if using egg white)
Add bourbon, rye, maraschino, demerara syrup, lemon juice, bitters, and the egg white (if using) to a cocktail shaker without ice. Seal and shake vigorously for 10–15 seconds to emulsify and create foam.

Wet Shake
Add a large handful of ice to the shaker. Shake vigorously for 12–15 seconds until well chilled and the shaker is frosty to the touch.

Strain
Double-strain the mixture into the chilled coupe or over one large ice cube in a rocks glass, using a fine-mesh strainer if possible to remove ice shards and any egg white solids.

Final Flavor Boost
Express the oil of the orange peel over the drink by holding the peel skin-side down above the glass and giving it a quick, firm squeeze so the oils spray onto the surface. Then run the peel around the rim and drop it into the cocktail (or place a Luxardo cherry on a pick and drop on top).

If served neat in a coupe, present immediately with the orange peel garnish and cherry. If served on the rocks, serve over the large ice cube and garnish the same way.
