    Chill the serving glass: place a coupe or martini glass in the freezer or fill with ice water while you prepare the cocktail.

    Combine ingredients

    In a cocktail shaker, add 2 oz Old Forester 86 proof bourbon, 0.5 oz demerara or rich simple syrup, 0.75 oz fresh lemon juice, 2 dashes Angostura bitters, and half a large egg white (or 1/2 oz pasteurized liquid egg white).

    Dry shake

    Seal the shaker and shake vigorously without ice for 15–20 seconds. This 'dry shake' emulsifies the egg white and creates foamy texture.

    Wet shake

    Add a generous handful of ice to the shaker and shake again vigorously for 12–15 seconds until the shaker is very cold to the touch and the exterior is frosty.

    Double strain & serve

    Discard the ice or water from the chilled glass. Using a Hawthorne strainer and optionally a fine mesh strainer, strain the cocktail into the chilled coupe to remove ice shards and get a silky foam on top.

Garnish

    Express oils from a fresh lemon twist over the foam by holding it skin-side down above the drink and giving it a quick squeeze or twist. Rub the twist around the rim if desired, then drop it onto the foam.

    Optional finishing touch

    Lightly grate a little nutmeg over the foam or add a few extra spritzes/drops of aromatic bitters on top for aroma and visual contrast.
