    Prep dates

    Line a small plate. Using a paring knife, make a lengthwise slit in each Medjool date and remove the pit. Keep dates whole (hinge them open slightly) so they can be filled. Reserve pits if using for presentation.

    Make candied dates

    In a small skillet over medium-low heat, add 1 tablespoon unsalted butter. When melted and foaming, add 2 tablespoons brown sugar and 1 teaspoon orange blossom water (if using). Stir until the sugar dissolves and the mixture becomes glossy (about 1–2 minutes). Add the prepared dates, turning them gently with a spoon so each is coated in the caramelized butter-sugar. Cook for 1–2 minutes more just to warm and glaze the dates; do not let them collapse. Transfer dates to a warm plate.

    Prepare mascarpone spread

    In a small bowl, combine 200 g mascarpone with 1 tablespoon honey, 1 teaspoon ground cinnamon, and a pinch (about 1/4 teaspoon) freshly ground black pepper. Stir gently until smooth and creamy. Taste and adjust honey or cinnamon to preference. Keep chilled until assembly, but bring to just below room temperature before serving so it's easily spreadable.

    Make pecan relish

    Toast 60 g chopped pecans in a dry skillet over medium heat for 3–4 minutes, shaking the pan, until fragrant and lightly browned. Remove from heat and let cool slightly. In a bowl, combine the toasted pecans with 1 tablespoon aged balsamic vinegar, a pinch (about 1/4–1/2 teaspoon) fine sea salt, and a small squeeze (about 1 tsp) of honey if desired. Stir to coat — this creates a sticky, slightly tangy relish. Reserve a few larger pecan pieces for garnish.

    Prepare baguette slices

    Preheat oven to 200°C (400°F) or heat a grill pan. Slice the baguette on the diagonal into 12 thin slices (about 1/2 cm thick). Brush both sides lightly with 1 tablespoon olive oil. Arrange on a baking sheet and toast in the oven 5–7 minutes, flipping halfway, until crisp and golden. Alternatively, pan-toast in a skillet for 2–3 minutes per side.

    Assemble crostini

    Spread about 1–1.5 tablespoons of the mascarpone mixture on each toasted baguette slice. Place a candied Medjool date (halved, if large) on top of the mascarpone. Spoon about 1 teaspoon of pecan relish over each date. Drizzle each crostini lightly with aged balsamic (about 1/4 teaspoon per crostini) and, if desired, a tiny extra thread of honey.

    Finish and garnish

    Sprinkle each crostini with a few flakes of sea salt and the reserved larger pecan pieces. Add a small pinch of lemon zest or a tiny mint leaf to each for brightness and contrast. Arrange on a platter and serve immediately so the baguette remains crisp and the mascarpone creamy.
