Ranchero Sauce

    Sauté aromatics

    Heat 1 tablespoon vegetable oil in a medium skillet over medium heat. Add the chopped onion and cook 4–5 minutes until translucent. Add the minced garlic and chopped jalapeño and cook another 1–2 minutes until fragrant.

    Simmer sauce

    Add the chopped tomatoes, ground cumin, smoked paprika, salt, and black pepper. Bring to a gentle simmer, reduce heat to low, and cook 8–10 minutes, stirring occasionally, until tomatoes have broken down and mixture has thickened slightly.

    Blend and finish

    Transfer mixture to a blender or use an immersion blender and pulse until slightly chunky — you want some texture. Return to the pan, stir in lime juice and chopped cilantro. Taste and adjust salt or heat. Keep warm on very low heat while you finish other components.

Prairie Fire Bean Dip

    Combine cooked beans, chipotle in adobo, sour cream, lime juice, ground cumin, kosher salt, and olive oil in a food processor. Pulse until mostly smooth with a few small bean pieces for body. Transfer to a small saucepan and gently warm over low heat for 3–4 minutes, stirring, until heated through. Keep covered and warm.

Crisp Base and Eggs

    Prepare pickled onion (do concurrently)

    Place thinly sliced red onion in a small bowl. Add rice vinegar and sugar, toss to combine, and let sit at least 10 minutes (can be done while sauce simmers) to mellow and slightly pickle. Stir in 1 tablespoon chopped cilantro before plating.

    Fry tortillas

    In a medium skillet, heat 1/4 cup vegetable oil over medium-high until shimmering. Test with a small corner of tortilla — it should sizzle immediately. Fry each tortilla 1–1.5 minutes per side until crisp and golden-brown. Remove and drain on paper towel. Season lightly with a pinch of salt while hot.

    Cook eggs

    Reduce skillet heat to medium-low and wipe out excess oil, leaving a thin film to cook eggs (or use a clean nonstick pan). For sunny-side: crack eggs into pan, cook 2–3 minutes until whites set but yolks runny; cover for the last 20–30 seconds if you prefer whites fully set. For over-easy: cook 2 minutes, flip gently, cook 20–30 seconds more. For scrambled: whisk eggs with 1/4 tsp salt and 1/8 tsp pepper, cook gently, stirring until just set. Season eggs with remaining salt and pepper.

Assembly & Garnish

    Place the two crisp tortillas on a warm plate, slightly overlapping. Spoon 2–3 tablespoons prairie fire bean dip onto each tortilla and spread to cover the center area.

    Ladle 1/4 to 1/3 cup warm ranchero sauce over the bean layer on each tortilla so edges remain exposed and crisp.

    Top each tortilla with a cooked egg (or portion of scrambled eggs).

    Fan or place half an avocado next to the eggs. Spoon a small amount of the pickled onion over the eggs and avocado.

    Sprinkle each plate with crumbled queso fresco or cotija and chop additional cilantro leaves and scatter over the dish. Finish with a drizzle of chile oil or a few drops of hot sauce and a lime wedge on the side.

    Serve immediately so the tortillas remain crisp and eggs are hot.
