Method

Brisket

    Preheat oven to 150°C (300°F). Pat the brisket dry with paper towels.

    Combine kosher salt, black pepper, garlic powder, and onion powder; rub evenly over all surfaces of the brisket. Let rest at room temperature 30 minutes (or refrigerate overnight for deeper seasoning).

    Heat vegetable oil in a large Dutch oven or heavy roasting pan over medium-high heat. Sear the brisket fat-side down until deeply browned, 6–8 minutes; turn and brown the other sides, about 4–6 minutes more.

    Add beef stock (or water) to the pan to come about 1–2 cm up the sides of the brisket. Cover tightly with a lid or foil and roast in the preheated oven until fork-tender, about 4–5 hours for a 2.5 kg brisket. Check after 3 hours and add liquid if needed.

    When done, transfer brisket to a cutting board and tent loosely with foil. Reserve cooking juices. Let rest at least 30 minutes before slicing thinly against the grain.

Datil Pepper BBQ Glaze (House sauce)

    While brisket cooks, make the glaze. In a saucepan over medium heat, warm oil and sweat the chopped onion until translucent, 4–5 minutes.

    Add minced garlic and Datil pepper puree; cook 30–45 seconds until fragrant.

    Stir in ketchup, apple cider vinegar, brown sugar, Worcestershire, soy sauce, smoked paprika, salt, and black pepper. Bring to a simmer, reduce heat to low, and simmer gently 10–12 minutes, stirring occasionally, until flavors meld and sauce thickens slightly.

    Taste and adjust heat/sweetness—add more Datil puree for heat or a teaspoon of sugar to balance acidity. Remove from heat and let cool slightly. Reserve about 1/2 cup for glazing and extra for serving.

Persian Cucumber–Pickled Ponzu Slaw

    In a bowl, whisk rice vinegar, ponzu sauce, mirin (if using), sugar, kosher salt, and toasted sesame oil until sugar dissolves.

    Add thinly sliced Persian cucumbers, shredded red cabbage, and julienned carrot. Toss to combine and let sit 10–15 minutes to lightly pickle and soften the vegetables.

    Just before assembly, stir in sliced green onion and toasted sesame seeds. Taste and adjust ponzu or salt if needed. Keep chilled until ready to serve.

Kewpie Citrus Mayo

    In a small bowl, whisk together Kewpie mayonnaise, lemon juice, citrus zest, toasted sesame oil, and salt until smooth. Adjust acidity and seasoning to taste. Refrigerate until assembly.

Assembly & Toasting

    Preheat a griddle or skillet to medium. Brush cut sides of brioche rolls with melted butter and toast cut-side down until golden, about 1–2 minutes.

    Slice rested brisket thinly against the grain. Return slices to a warm pan or brush with reserved Datil BBQ glaze and warm 1–2 minutes to coat and reheat. Use about 2–3 tbs glaze per 6 rolls (adjust to taste).

    To assemble each sandwich: spread about 1 tablespoon Kewpie citrus mayo on the bottom brioche. Pile on 3–4 slices of glazed brisket. Top with a heaping 1/3 cup of the Persian cucumber–pickled ponzu slaw. Garnish with cilantro or microgreens if using. Cap with toasted top bun and press lightly.

    Serve immediately with your choice of side (potato wedges, fries, or salad) and extra Datil BBQ sauce on the side.

Make-Ahead & Notes

    Brisket can be cooked a day ahead and refrigerated in its juices; reheat gently in a covered pan with a splash of reserved liquid, then glaze before assembling. Slaw keeps 48 hours refrigerated but is best within 24 hours. Sauce stores in refrigerator up to 2 weeks.
