Stevia Simple Syrup

Combine 1/2 cup water and 3/4 tsp powdered stevia in a small saucepan.

Warm gently over low heat, stirring, until the stevia dissolves and the mixture is clear (do not boil). This should take about 2–3 minutes.

Remove from heat and cool to room temperature. Transfer to a jar and chill until ready to use. Makes about 3–4 oz of syrup.

Mojito Preparation

Muddle

Place 10 fresh mint leaves and 2 lime wedges into a sturdy highball or Collins glass. Add 0.75 oz (3/4 oz) of the prepared stevia simple syrup and 1 oz fresh lime juice. Using a muddler or the back of a spoon, gently press and twist the mint and lime to release the oils and juice. Do not over-muddle (avoid shredding the mint to prevent bitterness).

Add 2 oz white rum to the glass.

Fill the glass about three-quarters full with crushed ice (approximately 1 cup).

Top with 2.5 oz club soda. Using a long spoon or bar spoon, gently stir from bottom to top 6–8 times to lift the mint through the drink and combine ingredients evenly.

Taste and adjust: if you prefer sweeter, add up to 0.25 oz more stevia simple syrup; if you prefer brighter lime, squeeze the remaining lime wedge into the glass and drop it in.

Garnish with one fresh mint sprig slapped between your palms to release aroma and placed on top. Serve with a straw.
