Stevia Simple Syrup
Make syrup
Combine 1/2 cup water and 1 teaspoon granulated stevia in a small saucepan. Warm gently over low heat, stirring constantly until the stevia dissolves (this takes only a minute or two). Do not boil. Remove from heat and let cool to room temperature. Transfer to a small jar and refrigerate. Yields roughly 3–4 ounces; use 1/2 ounce per cocktail.
Assemble Tiny Collins
Build: Fill a Collins or highball glass with fresh ice (about 1 cup). Pour in 2 oz dry gin, 1/2 oz fresh lemon juice, and 1/2 oz stevia simple syrup directly over the ice.
Adjust: Taste and adjust sweetness or acidity — add an extra 1/4 oz stevia syrup if you prefer sweeter, or another 1/4 oz lemon juice if you prefer brighter tartness.
