Method
Prepare Simple Syrup (Base)
Make sugar syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Bring to a gentle boil over medium heat, stirring occasionally until sugar fully dissolves (about 3–4 minutes). Reduce heat and simmer for 1 minute. Remove from heat.
Add citrus and salt
While the syrup is still warm, stir in 2 tablespoons fresh lemon juice, 1 tablespoon fresh lime juice, and 1 teaspoon fine sea salt. Stir to combine. Let the syrup cool to room temperature (about 20–30 minutes).
Strain the syrup through a fine mesh sieve into a clean bowl if you added zest or ginger in later steps (see flavoring options). Reserve.
Prepare Flavoring (choose one or combine up to two)
Vanilla-citrus
For a classic creamy soda, stir 1 teaspoon vanilla extract and 1 tablespoon orange zest into the cooled syrup. Let steep for 10 minutes, then strain out zest.
Ginger soda
For ginger soda, add 1 ounce thinly sliced fresh ginger to the warm syrup after removing from heat. Let steep 15–20 minutes, then press the ginger and strain the syrup to capture flavor without solids.
Mint soda
Lightly bruise 8 fresh mint leaves with the back of a spoon and add them to the cooled syrup. Let sit 10–15 minutes for aroma, then remove leaves (or leave some for bottling).
Berry soda
If using berry puree, whisk 1 cup berry puree into the cooled syrup until homogeneous. If a smoother soda is desired, pass the puree+syrup through a fine sieve to remove seeds.
Assemble Soda & Bottle
Chill the 4 cups (about 1 liter) of carbonated water until cold. Cold water retains carbonation better on mixing.
Decide syrup-to-soda ratio. A good starting point is 1 part syrup to 4 parts carbonated water (but adjust to taste). Measure 1 cup of the prepared flavored syrup (if you made multiple flavors, mix them now to taste) to 4 cups carbonated water for a medium-sweet soda.
In a large pitcher, gently combine the measured syrup and the cold carbonated water. Stir carefully with a long spoon just once or twice to mix — avoid vigorous stirring to preserve carbonation.
If you prefer to keep syrup separate for on-demand mixing, bottle syrup in a small jar and refrigerate; mix 1 part syrup to 3–6 parts carbonated water when serving.
Serve & Store
Chill bottled soda in the refrigerator for at least 1 hour before serving. Serve over ice if desired and garnish with fresh fruit slices or a sprig of mint.
Consume fresh sodas within 3–5 days for best flavor. Keep sealed bottles refrigerated. Discard if off-odors develop.
